Easy, Flexible Recipe
An easy way to make a meal out of left-over rice. If you don't have any leftover rice, make some afresh!
Ingredients
2 cup cooked rice
1 tsp ginger-garlic paste
1 onion sliced
1 tomato chopped
1 cup mixed vegetables chopped
1 pinch garam masala powder
1 tbs coriander leaves chopped
oil, butter, turmeric powder, red chilly powder, pepper, salt, water
(readily found in most kitchens, including mine)

Ingredients

1 tsp ginger-garlic paste

Method
- Pour 2 cups boiling water into the rice. After a minute, drain & discard the water. Mix 1 tsp oil in the rice and set it aside. (If the rice is freshly made, skip this step)
- Heat oil in a pan, put in the onion & fry. Add ginger-garlic paste.
- Add vegetables, turmeric and tomato. Stir-fry for 2 minutes on high heat, sprinkling water to keep it moist. Simmer till the vegetables are cooked (5-6 minutes depending on the vegetables).
- Put in the rice along with chilly powder, pepper, salt and butter to taste. Give it a good stir.
- Cover and simmer for 1-2 minutes. Garnish with garam masala and coriander leaves.
- Dig in and enjoy your hot Rice Meal-in-One.

- Instead of vegetables, use chicken pieces or boiled eggs.
- This dish serves one. Double the quantities to serve two.
