Roti Sandwich

This makes a hearty snack. You could also make it a meal, with something on the side - a bowl of raitha or yoghurt  or soup. Otherwise double the quantities and make two Roti Sandwiches!
Ingredients
2 rotis (or tortillas)
1 egg
1 tomato chopped fine
1/2 onion chopped fine
1/4 tsp red chilli powder
1 tsp any fresh herbs
(coriander, mint, basil, dill)
pepper and salt to taste

Method
  1. Whisk all together except the rotis.
  2. Heat a griddle or frying pan. Spread 1/2  tsp butter/oil on it. Lower the heat. 
  3. Place a roti on the hot pan.
  4. Pour the whisked mixture evenly over the roti. 
  5. Cook covered till nearly set. (1-2 minutes).
  6. Place the other roti on top. Firmly press round the edges with a ladle or wooden spatula.
  7. Spread 1/2 tsp butter on top.
  8. Lift the whole thing carefully and flip it over.
  9. Cover and cook for another minute or two.
  10. The Roti Sandwich is ready.
  11. Cut into wedges and eat with ketchup or chutney.
Tips
  1. It helps to rub the bottom of the first roti with a wet hand, at step 3.
  2. Instead of the egg, you can use 
    • paneer or cottage cheese crumbled and mixed with 1 tsp milk.
    • pre-cooked shredded meat.
