This makes a hearty snack. You could also make it a meal, with something on the side - a bowl of raitha or yoghurt or soup. Otherwise double the quantities and make two Roti Sandwiches!

- Whisk all together except the rotis.
- Heat a griddle or frying pan. Spread 1/2 tsp butter/oil on it. Lower the heat.
- Place a roti on the hot pan.
- Pour the whisked mixture evenly over the roti.
- Cook covered till nearly set. (1-2 minutes).
- Place the other roti on top. Firmly press round the edges with a ladle or wooden spatula.
- Spread 1/2 tsp butter on top.
- Lift the whole thing carefully and flip it over.
- Cover and cook for another minute or two.
- The Roti Sandwich is ready.
- Cut into wedges and eat with ketchup or chutney.
- It helps to rub the bottom of the first roti with a wet hand, at step 3.
- Instead of the egg, you can use
- paneer or cottage cheese crumbled and mixed with 1 tsp milk.
- pre-cooked shredded meat.
